White Chicken Chili

- 1 rotisserie chicken
- 1 Tbsp olive oil
- 16 oz chicken broth
- 2 cans white beans
- 1 cup frozen corn
- 1 ½ Tbsp cumin
- 1 jar salsa
- 1 cup shredded Monterey Jack cheese
- SAUTE chicken with olive oil for one to two minutes.
ADD broth, beans, cumin, corn and salsa.
BRING to a simmer and ADD cheese.
STIR until cheese is melted.
