White Chicken Chili

Ingredients

  • 1 rotisserie chicken
  • 1 Tbsp olive oil
  • 16 oz chicken broth
  • 2 cans white beans
  • 1 cup frozen corn
  • 1 ½ Tbsp cumin
  • 1 jar salsa
  • 1 cup shredded Monterey Jack cheese

Directions

  1. SAUTE chicken with olive oil for one to two minutes.
  2. ADD broth, beans, cumin, corn and salsa.
  3. BRING to a simmer and ADD cheese.
  4. STIR until cheese is melted.
