Bacon Egg Cups

A less mess breakfast solution! Stick to one pan to clean and pop out a breakfast loved by the whole family. For a posh Sunday brunch, a quick morning tailgate solution, or a speedy school breakfast, these can be whipped up in under 30 minutes!

Bacon Egg Cups

  • 6 slices bacon
  • 6 eggs
  • to taste salt
  • to taste pepper
  • 1/4 C. shredded cheddar cheese
  • optional, to taste chives

Total Time: 30 mins.

Directions

1. Preheat the oven to 400°F.

2. Place the slices of bacon in the muffin tin, wrapping in a circle.

3. Bake the bacon for 10 minutes.

4. Remove the bacon from the oven and pour out any excess grease, if desired. Crack 1 egg into each of the cups, then sprinkle with salt, pepper, and cheddar cheese.

5. Bake for another 10 minutes, or until the egg yolks reach your desired consistency.

6. Run a knife around the edge of each cup to loosen and remove. Sprinkle with chives, if desired.
