  • 1 loaf whole wheat bread
  • 1 cup blueberries
  • 1/2 cup sliced almonds
  • 1/2 cup lowfat cottage cheese
  • 2 cup egg substitute OR 6 eggs, whisked
  • 2 1/2 cup skim milk
  • 2 Tbsp granulated sugar
  • 1 tsp vanilla
  • 1/4 tsp almond extract

Directions

  1. Coat a 9" x 13" baking dish with nonstick cooking spray.
  2. Tear bread into one inch cubes and mix with blueberries and almonds.
  3. Spread bread mixture evenly in the baking dish.
  4. Blend cottage cheese in a food processor or blender until smooth.
  5. Combine with milk, eggs, sugar, and extracts.
  6. Pour the liquid mixture over the bread.
  7. For best results, cover and refrigerate the casserole for at least one hour, up to overnight.
  8. Preheat oven to 375°F.
  9. Cover casserole with aluminum foil and bake for 20 minutes.
  10. Remove the foil and bake for an additional 20 minutes until the casserole is puffy and golden brown.
