  • 3 pound beef chuck roast
  • 1 large onion, chopped
  • 1 cup prepared barbecue sauce
  • 1 cup prepared coleslaw
  • 16 slider rolls

Directions

  1. Heat oil in stockpot over medium heat until hot.
  2. Place beef roast in stockpot; brown evenly.
  3. Remove roast from stockpot. Pour off drippings.
  4. Add onion to stockpot; cook and stir 3 to 5 minutes or until crisp-tender.
  5. Return roast to stockpot. Stir in barbecue sauce; bring to a boil. Reduce heat; cover tightly and simmer 2 to 3 hours or until roast is fork-tender.
  6. Remove roast; keep warm.
  7. Skim fat from cooking liquid; keep warm.
  8. Carve roast into thin slices; stir into cooking liquid.
  9. Season with salt and pepper, as desired.
  10. Warm rolls, if desired. Layer beef mixture evenly onto bottoms of rolls and top with coleslaw.
