- 1/2 cup olive oil
- 2 medium onions, chopped
- 4 garlic cloves, minced
- 2 jalapenos, deseeded and minced
- 2 (15.5 ounce) cans black beans, drained and rinsed
- 1 dash salt
- 1/2 tsp ground cumin
- 2 Tbsp fresh lime juice
- 3 Tbsp water
- 1/2 cup cilantro, chopped
Heat oil over medium heat. Saute onions, garlic and jalapenos until tender, stirring occasionally, about 10 minutes. Transfer to a blender or food processor.
Add remaining ingredients to blender or food processor and blend until smooth, adding more water if necessary.
