Directions
Preheat oven to 425 degrees F. Remove roast from packaging and place in an oven-safe dish, fat side up. Roast on the center rack for 15 minutes.
Lower the oven temperature to 325 degrees F and continue roasting until the internal temperature reaches 145 degrees F, about 1–1½ hours.
Remove from the oven and loosely tent with aluminum foil. Rest for 10–15 minutes before slicing.
