Breakfast Wrap

  • 4 (8-inch) tortillas
  • 6 eggs
  • 1/2 pound diced ham
  • 1/2 cup shredded cheese
  • to taste salt and pepper

Whisk eggs with salt and pepper. Heat skillet over medium heat  and spray with nonstick cooking spray. Scramble and cook eggs until cooked through and set, 3–5 minutes.

Stir in ham and cheese.

Add egg mixture to tortillas and roll up.

To freeze: individually wrap in clear plastic wrap and freeze.

To reheat: remove plastic wrap and wrap in a paper towel. Microwave until hot, 1–2 minutes.
