  • 2 cups cooked brown rice
  • 2 cups cooked chicken
  • 1/2 cup shredded cheese
  • 1/2 cup salsa
  • 1/2 cup plain Greek yogurt
  • 2 tsp taco seasoning
  • 1 tsp onion powder
  • 3 bell peppers (any color), cut in half lengthwise, seeds removed

Colorful, protein-packed, and easy to make! These stuffed peppers are a nutritious dinner option for the whole family.


Combine first 7 ingredients. Place bell pepper halves, cut side up, in a 9x13 baking dish. Fill with chicken mixture. Bake at 350⁰F for 20 minutes, or until filling is bubbly and warmed through.
