Chicken Cordon Bleu Casserole

  • 3 C. shredded chicken
  • 1/4 lb. deli ham, chopped
  • 4 slices Swiss cheese
  • 4 Tbsp. butter, divided
  • 1 garlic clove, minced
  • 2 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 1/4 tsp. ground pepper
  • 1/4 tsp. smoked paprika
  • 2 Tbsp. all-purpose flour
  • 1 1/2 C. milk
  • 3/4 C. seasoned breadcrumbs
  • 2 Tbsp. parmesan cheese

Directions

  1. Preheat oven to 350⁰F.

  2. Spray 8" x 8" baking dish with nonstick spray. 

  3. Spread chicken on the bottom of the dish. Top with ham and Swiss cheese. 

  4. Melt 2 tablespoons butter in a medium saucepan. Add garlic and sauté for 30 seconds. 

  5. Add Dijon, salt, pepper, paprika and flour. Whisk and cook for 1 minute. 

  6. Add milk. Bring sauce to a boil, stirring to avoid lumps. 

  7. Pour sauce over chicken mixture. 

  8. Melt remaining butter. Combine with breadcrumbs and parmesan. Top casserole with breadcrumbs and bake until cheese has melted, 30–40 minutes. Allow casserole to cool for 10 minutes before serving.
