  • 1 pound boneless, skinless chicken breast
  • 3 bell peppers
  • 2 red onion
  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 lime
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 0 dash cayenne pepper
  • 10 skewers

The chili-lime marinade will give your chicken an exotic twist using ingredients you already have in your pantry!

Chili Lime Chicken Kabobs

Preparation Notes

Summer squash, zucchini, mushrooms, and cherry tomatoes also work well on kabobs.

Directions

  1. Place the skewers in water and allow to soak until ready to use.

  2. In a small bowl, whisk together the olive oil, vinegar, lime juice, chili powder, paprika, onion powder, garlic powder, and cayenne pepper,

  3. Place cubed chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.

  4. Thread chicken and chopped veggies onto skewers, and discard marinade

  5. Lightly oil the grill grate. Grill skewers on medium heat for 10 to 15 minutes, or until the chicken juices run clear.
