Servings: Makes 4 (2 kebab) servings
Total Time: 30 minutes + marinating time
- 1 pound boneless, skinless chicken breasts, cut into 1 inch cubes
- 3 cups cubed vegetables, such as peppers. onions, summer squash, or mushrooms
- 1 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 lime, juiced
- 1/2 tsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/8 tsp cayenne pepper
- 8 skewers
If using wooden skewers, place them in water and allow to soak for at least 20 minutes.
In a small bowl, whisk together olive oil, vinegar, lime juice, chili powder, onion powder, garlic powder, paprika and cayenne pepper.
Place chicken in a shallow baking dish with marinade, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour, up to 4 hours.
Thread chicken and veggies onto skewers, and discard remaining marinade
Grill skewers over medium heat for 10 to 15 minutes, or until the chicken internal temperature reaches 165°F, turning occasionally.
