Ingredients
- 1 tsp olive oil
- 1/4 tsp crushed red peppper
- 2 cups diced mushrooms
- 1 1/2 cup diced carrots
- 3/4 cup chopped onion
- 3/4 cup chopped bell pepper
- 1 medium zucchini, chopped
- 4 garlic cloves, chopped
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp dried thyme
- 1 (15 ounce) can chili beans
- 1 (14.4 ounce) can diced tomatos with jalapeno chili peppers
- 2 tbsp chopped cilantro
This chili is a great vegetarian option to warm you up in the winter! Spicy and sweet and no trace of meat!
Directions
Heat oil and crushed red pepper over medium-high heat for one minute. ADD mushrooms, carrots, onion, bell pepper, zucchini, garlic, oregano, cumin, chili powder and thyme. SAUTE for 5 to 8 minutes, stirring frequently. ADD beans and tomatoes; LOWER heat to a simmer. COOK, uncovered, for 20 minutes, stirring occasionally. ADD cilantro.
