- 1 Comfrey Farm Certified DUROC® Boneless Pork Loin
- 3 Tbsp kosher salt
- 1 Tbsp dark brown sugar
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 1/2 tsp garlic
- 1/2 tsp ground turmeric
- 1 Tbsp olive oil

Generously rub all sides of the pork loin with salt and refrigerate for at least 2 hours. Take the pork loin out of the refrigerator and let it come to room temperature for about 30 minutes.
Meanwhile, preheat the oven to 400°F. In a bowl, combine all of the spices with the sugar, and generously rub on all sides of the pork loin.
Heat up the stovetop, add a small drizzle of olive oil to a pan, and sear the pork loin for about 3 minutes each side.
Place pork loin in a roasting pan, fat side up, uncovered, and cook until the internal temperature of the meat reaches 145°F.
Remove the pork loin from the oven, placing it on a cutting board and allow to rest for 3 minutes before slicing the meat.
