Cuban Pork Tenderloin

This recipe uses orange juice and grapefruit juice to produce the most tender pork tenderloin.

Ingredients

  • 1 1/2 pound pork tenderloin
  • 1/4 cup orange juice
  • 1/4 cup grapefruit juice
  • 2 Tbsp cilantro, chopped
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 2 clove garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp red pepper flakes

Directions

  1. Mix orange juice, grapefruit juice, cilantro, cumin, oregano, garlic, salt, and red pepper in gallon-sized zip-top plastic bag.
  2. Add pork and refrigerate for at least 30 minutes; up to 4 hours.
  3. Heat grill to medium-high.
  4. Remove pork from marinade and discard remaining marinade. Grill, covered, about 20-25 minutes, turning occasionally or until the internal temperature reaches 145° F.
  5. Remove from grill and let rest 3-5 minutes before slicing.
