  • 2 C. peeled and sliced carrots
  • 1/2 C. diced red onion
  • 2 Tbsp. fresh dill, chopped OR 2 tsp. dried dill
  • 1 tsp. olive oil
  • 2 Tbsp. red wine vinegar
  • to taste salt and pepper

Carrots don't have to be boring any longer! Packing the nutrients into a tasty side dish, this Dilly Carrot Salad pairs great for any time of the year alongside your favorite meats like Pork Tenderloin, BBQ Chicken Thighs, and more.

Dilly Carrot Salad


  1. Parboil carrots by bringing a large pot of water to a boil. Add sliced carrots, boil until crisp-tender,  2–4 minutes.

  2. Remove carrots and rinse under cold water. Drain carrots and combine with remaining ingredients.

  3. Refrigerate for at least 3 hours before serving.
