Mug Cake
- 3 1/2 Tbsp. all purpose flour
- 1 Tbsp. cocoa powder
- 2 Tbsp. granulated sugar
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- pinch kosher salt
- pinch instant coffee or espresso powder
- 2 Tbsp. Kerrygold Salted butter, melted
- 2 1/2 tsp. whole milk
- 1/2 tsp. pure vanilla extract
- 2 Tbsp. chocolate chips
- optional vanilla ice cream, whipped cream, caramel syrup

In a standard size mug, combine the flour, cocoa powder, sugar, baking powder, baking soda, instant coffee and salt. Mix thoroughly with a fork or small whisk.

Add the melted butter, milk, vanilla extract, and chocolate chips. Whisk to combine until no dry patches of flour remain.

Microwave on high power for 60 seconds until the top of the mug cake is firm to the touch. Top with vanilla ice cream, whipped cream, or salted caramel. Enjoy right away!
