Egg Roll in a Bowl
- 1 Tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp fresh ginger
- 1 tsp Chinese five spice
- 2 Tbsp low sodium soy sauce
- 1 lb ground pork
- 4 cups shredded veggie mix
- 1 cup packaged shredded carrots
- optional brown rice
- optional chopped green onion
Customizable, low carb, and delicious!
Heat the olive oil in a large skillet over medium heat. Add garlic and ginger and saute until fragrant.
Add the five-spice, low sodium soy sauce, and pork.
Add the veggie mix and carrots. Toss until the vegetables are tender-crisp and meat is cooked through.
Serve over rice and garnish with green onions if desired.
