French Onion Soup

Preparation Notes

For this recipe we recommend Guinness beer.

Directions

  1. Heat oil in a large skillet over high heat.
  2. Mince garlic, chop fresh thyme, and thinly slice onions.
  3. Add garlic and cook briefly. Add onions.
  4. Season with salt and cook for about 5 minutes, stirring often.
  5. Reduce heat to low and cook for about 15 minutes,
  6. Stirring occasionally until onions are golden brown.
  7. Add thyme, vinegar, and beer.
  8. Cook until mixture has reduced by half and
  9. Add beef stock. bring to a simmer and cook for 10 more minutes.
  10. Optional: preheat broiler. Transfer soup to an ovenproof serving dish and top with croutons and sliced cheese. Broil until cheese melts and start to brown lightly.
