Fruit and Nut Bleu Cheese Salad

  • 2 heads romaine lettuce, torn
  • 1 small head radicchio, shaved or 2 cups arugula
  • 2 Honeycrisp or sweet-tart apples, cut into slices
  • 2 medium celery ribs, chopped
  • 1/2 cup dried cherries, chopped
  • 1/3 cup hazelnuts, toasted and chopped
  • 6 ounces bleu cheese, shaved (about 1 1/2 cups)

Lemon-Honey Dressing

  • 1 Tbsp. lemon juice
  • 1 Tbsp. honey
  • 1 tsp. lemon zest
  • 1 tsp. minced fresh thyme
  • 1 tsp. Dijon mustard
  • 1/4 cup olive oil
  • to taste salt and pepper

1. Whisk the lemon juice, honey, lemon zest, thyme and Dijon mustard in a small bowl. Slowly whisk in olive oil. Season with salt and pepper.

2. Toss lettuce and radicchio with 1/4 cup dressing in a large serving bowl. Top with the apples, celery, dried cherries and hazelnuts. Drizzle with remaining dressing. Sprinkle with Dunbarton Blue®.
