Fruited Dessert Pizza

Did you know that canned produce is on par nutritionally with fresh and frozen? So, when you’re preparing this homemade Fruited Dessert Pizza, reach into your pantry for a can of apricot halves, sliced peaches and dark sweet cherries!

Crust

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 egg
  • 1/2 tsp almond extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Topping

  • 8 ounces cream cheese, softened
  • 3 Tbsp light brown sugar
  • 1 Tbsp orange zest
  • 1 can apricot halves, drained and sliced
  • 1 can sliced peaches, drained
  • 1 can pitted dark sweet cherries, drained

Directions

Prepare crust: Preheat oven to 350°F. Grease 12-inch pizza pan. With mixer, cream butter, granulated sugar and brown sugar until light and fluffy. Add egg and almond extract; blend. Add flour, baking powder and salt; blend well. With floured hands, press into prepared pan. Bake until edges are browned, about 10 minutes. Set aside to cool.

Prepare topping: In small bowl combine cream cheese, brown sugar and orange peel until well blended. Spread mixture on cookie crust, to within 1-inch from edge. Arrange apricots, peaches and cherries on top of crust.
