- 1 ounce Chicken of the Sea Bristling Sardines in Pure Spring Water
- 3 ounces goat cheese
- 3 tbsp nonfat milk
- 1/4 tsp black pepper
- 1/2 clove garlic, minced
- 1 tsp minced shallot
- 1 tbsp minced parsley
- 1/4 cup pine nuts
- 1 1/2 cucumbers, sliced
With an electric mixer, mix goat cheese, milk and black pepper in a medium bowl until light and fluffy, about 1 minute.
Stir in garlic, shallots, parsley, pine nuts, and flaked sardine filets into the goat cheese mixture.
Mix well to combine.
Slice the cucumbers into 12 thick slices.
Place 1 tablespoon of the goat cheese mixture on top of each cucumber slice.
Garnish with fresh parsley, if desired.
