Ingredients
- 1 bell peppers, sliced
- 1/2 eggplant, sliced
- 1/2 cup mushrooms, sliced
- 1/2 onion, chopped
- 3 Tbsp olive oil
- 1 pizza crust, prepared according to package directions
- 1/4 cup marinara sauce
- 4 oz mozzarella cheese
This pizza is a great way to transform any of your leftover veggies!

Directions

Heat grill to medium. If using a charcoal grill, wrap foil over the grate prior to lighting to protect your pie from the flames.

Brush olive oil onto both sides of pizza crust.

Place crust directly on grill for 1-2 minutes on each side.

Remove from heat and place on cookie sheet.

Spread pizza sauce onto crust.

Top with vegetables and cheese.

Place pizza back on the grill, close cover, and cook 4-6 minutes or until crust is browned and cheese is melted.

Remove and sprinkle with your choice of herbs.
