Herb Cured Pork Tenderloin

This simple pork tenderloin is packed with flavor, and uses herbs and spices you probably already have at home! Just stop by your local Fareway Meat Market for the best pork tenderloins for this recipe! 

Ingredients

  • 1 pork tenderloin (about 1 - 1 ½ pounds)
  • 1 Tbsp fresh thyme
  • 2 Tbsp chives
  • 3 clove garlic
  • 2 tsp brown sugar
  • 1 Tbsp salt
  • 1 Tbsp black pepper
  • 1 Tbsp vegetable oil

Directions

  1. Preheat oven to 400°F.

  2. Place thyme, chives, garlic cloves, brown sugar, salt and pepper in a food processor; pulse to make a coarse paste.

  3. Rub mixture on the tenderloins and press firmly to allow the mixture to adhere to the meat.

  4. Place 1 tablespoon vegetable oil in a large skillet over high heat.

  5. Cook the pork 2-3 minutes total in the skillet. Gently turn pork after each minute until lightly browned, being careful not to burn the herb crust.

  6. Place pork in the oven; roast 20-30 minutes or until internal temperature reaches 145° F.
