Ingredients
- 1/2 cup light balsamic vinaigrette
- 4 cups kale
- 2 cups cooked quinoa
- 1/2 cup cherry tomatoes
- 1/4 cup roasted red peppers, diced
- 1 avocado, sliced
- 2 Tbsp pumpkin seeds
Directions
Drizzle kale with half of the salad dressing. Massage kale until tender and reduced in size, about 3-5 minutes.
Combine all ingredients and toss with remaining salad dressing.
