- 1 tsp garlic, minced
- 1 onion, chopped
- 2 cup kale
- 3 Tbsp cilantro, chopped
- 3 Tbsp parsley, chopped
- 1 jalapeño, chopped and seeded
- 1 tsp large avocado, roughly chopped
- 1/4 cup lemon juice
- 1/4 cup tomato, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
Adding kale to guacamole is a leap of faith, but we promise it's better than it sounds! In fact, kale brings a refreshing zing to the molcajete and a whole new level of green pigments.
In a food processor, add garlic, onion and kale; blend until smooth.
Add cilantro, parsley and jalapeño; continue processing until smooth.
Pour processed mixture into a bowl; add chopped avocado;
Mash until entire mixture is creamy and combined well.
Stir in lemon juice, chopped tomato, salt, and pepper.
