Lemon Vinaigrette
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup white wine vinegar
- 2/3 cup olive oil
- to taste salt and pepper
Salad
- 8 ounces (8 cups) arugula
- 1/2 cup Parmesan cheese
It does not get more refreshing than this sweet and zesty salad. Perfect on its own or paired with a protein!

Directions
Place lemon juice and vinegar in a small bowl and whisk in olive oil. Season with salt and pepper, to taste.
To make the salad, toss arugula with dressing and top with parmesan cheese. Serve immediately.
