Lemon-Herb Crusted Cod with Berries and Chopped Salad

  • 1 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 1/2 cup panko bread crumbs
  • 1/4 cup fresh parsley, finely chopped
  • 1 lemon peel, grated and chopped
  • 1 tsp garlic, chopped
  • 3/4 tsp salt
  • 3 cod filets
  • 1 package DOLEĀ® Chopped Poppy Seed Salad Kit
  • 1 cup blueberries
  • 1 cup strawberries, sliced

  1. Preheat oven to 400 F. Spray baking sheet with cooking spray.

  2. Combine olive oil and mustard in small bowl; brush on fish.

  3. Stir together bread crumbs, parsley, garlic, lemon peel, and salt.

  4. Divide mixture between fish filets, pressing lightly.

  5. Place on a prepared baking sheet, crust-side up. Bake12 to 14 minutes or until fully cooked.

  6. Stir together chopped poppy seed kit ingredients.

  7. Divide between plates. Top each with blueberries, strawberries, and fish.

  8. Serve with lemon wedges, if desired.
