If you've worked in a restaurant, you may have heard someone say, "if it swims, it gets a lemon." Ever wondered why? Fish proteins contain something called amines, which gives them their 'fishy' smell and taste. When mixed with acid, amines react to form amine salt. Amine salts don't have any taste or smell.
Directions
-
Combine first 5 ingredients in a small bowl.
-
Pour over tilapia and cover.
-
Refrigerate for one hour.
-
Preheat grill to medium heat and drain excess marinade from fillets using a wire rack.
-
Grill 6 to 8 minutes per side, or until fish easily flakes with a fork.
