Ingredients
- 1/2 pound lean ground beef
- 1 Tbsp chili powder
- 1 1/2 cup onion
- 2 cup lentils
- 1 can diced tomatoes
Lentils are a little-known superhero when it comes to building nutritious meals. With more iron and (on average) more protein than beans, lentils are a great swap. This lentil chili is also easily modified to be vegan and vegetarian!

Try adding black beans (or your favorite bean) to boost protein and fiber
Directions

Cook and drain lentils.

Chop onion.

In a large saucepan, brown beef over medium-high heat and drain fat.

Reduce heat to medium and add onion and garlic.

Cook until softened, about 5 miutes.

Add lentils, tomatoes and chili powder.

Cook on low heat for about one hour.
