Lentil Chili

Lentils are a little-known superhero when it comes to building nutritious meals. With more iron and (on average) more protein than beans, lentils are a great swap. This lentil chili is also easily modified to be vegan and vegetarian!

Ingredients

  • 1/2 pound lean ground beef
  • 1 Tbsp chili powder
  • 1 1/2 cup onion
  • 2 cup lentils
  • 1 can diced tomatoes

Preparation Notes

Try adding black beans (or your favorite bean) to boost protein and fiber

Directions

  1. Cook and drain lentils.

  2. Chop onion.

  3. In a large saucepan, brown beef over medium-high heat and drain fat.

  4. Reduce heat to medium and add onion and garlic.

  5. Cook until softened, about 5 miutes.

  6. Add lentils, tomatoes and chili powder.

  7. Cook on low heat for about one hour.
