Lighter Fish and Chips

Fish and chips are a fun and kid-friendly meal for any time of year. This recipe keeps things nutritious and delicious for the whole family. 

Ingredients

  • 1 pound cod loins
  • 1 egg, beaten
  • 1 cup bread crumbs
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pound fingerling OR bite sized potatoes
  • 1 Tbsp olive oil

Directions

  1. Preheat oven to 450° F.

  2. Drizzle potatoes with oil and season with salt and pepper.

  3. Season with salt and pepper, to taste. Roast for 30 minutes, or until tender. Meanwhile, season cod with salt and pepper.

  4. Dip in egg then breadcrumbs.

  5. Roast at 450 F for 15 minutes, or until lightly browned and cod flakes easily with a fork.
