Ingredients
- 1 pound pork tenderloin
- 1 cup margarita drink mix
- 1 tsp ground coriander
- 1 clove garlic
- 1 bell pepper
- 2 ears corn
- 2 Tbsp butter
- 2 tsp lime juice
- 1/8 tsp sugar
- 1 sprig parsley

Preparation Notes
Instead of margarita mix, you can substitute 1 cup lime juice, 4 tsp. sugar, 1/2 tsp. salt
Directions

Mince garlic and parsley.

Cut pork tenderloin into 1 inch cubes.

Cut bell pepper into 1 inch cubes.

Cut corn into 8 pieces.

Combine margarita mix, coriander, and garlic.

Place pork cubes in heavy plastic bag; pour marinade over to cover. Marinate for at least 30 minutes.

Blend softened butter, lime juice, sugar and parsley; set aside.

Remove pork and discard used marinade.

Thread pork cubes onto skewers, alternating with pieces of corn and pepper.

Grill over hot coals, basting with butter mixture, for 15 - 20 minutes, or until internal temperature of pork reaches 145°F, turning frequently
