  • 1 can black bean soup
  • 3/4 c. canned corn with bell peppers
  • 1/4 c. salsa
  • 3 tbsp. light sour cream
  • 15 crackers saltine crackers

Preparation Notes

Serve topped with shredded reduced-fat cheddar cheese, chopped jalapeño peppers and/or fresh cilantro.

Tip: Serve over hot cooked rice.

Directions

1. Cook soup, corn and salsa in saucepan on medium heat 5 min. or until heated through, stirring occasionally.
2. Ladle into soup bowls; top with sour cream.

3. Serve with crackers.
