  • 2 eggs
  • 2 Tbsp milk
  • 1 package shredded cheese

Eggs hold up surprisingly well in the microwave, and are a great breakfast option for days when you need some extra fuel without the extra time.


  1. Coat a 12-ounce microwave-safe coffee mug with cooking spray.

  2. Add eggs and low-fat milk.

  3. Beat until blended.

  4. Microwave on high for 45 seconds.

  5. Gently stir.

  6. Microwave until eggs are almost set - 30 to 45 seconds longer.

  7. Top with cheese.
