Minestrone Soup

Warm up with a bowl of hearty minestrone soup. This classic Italian soup is brimming with a medley of fresh vegetables, tender beans, and pasta, all simmered in a rich, flavorful broth. 

Ingredients

  • 1 Tbsp. oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 celery stalks, chopped
  • 2 large carrots, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 tsp. dried oregano
  • 1 tsp. paprika
  • 1 tsp. italian seasoning
  • 1/2 tsp. black pepper
  • 1 can white beans, drained and rinsed
  • 3/4 cup medium shell pasta
  • 1 cup canned or frozen green beans
  • 2 cups baby spinach

Directions

Heat oil in a large pot over high heat. Sauté onion, garlic, celery and carrots until softened, 8 minutes. Add in broth, tomatoes, seasonings, salt, pepper and white beans. Bring to a boil, reduce heat to medium and simmer for 10–12 minutes. Add pasta and green beans. Cover and cook until pasta is tender, 10–12 minutes. Remove from heat and stir in spinach.
