  • 2 can cream of chicken soup
  • 8 oz reduced-fat sour cream
  • 1 can chopped green chilies
  • 1 1/2 Tbsp minced onion
  • 1 package tortillas
  • 1 rotisserie chicken
  • 2 cup shredded cheddar cheese

Start with one Fareway rotisserie chicken -- and make healthy meals in minutes!  This mini chicken enchilada recipe only takes 30 minutes and is the perfect recipe for a snack or appetizer.

Mini Chicken Enchiladas


  1. Preheat oven to 350°F.

  2. Combine cream of chicken soup, sour cream, chopped green chilies and minced onion.

  3. Fill 12 tortillas with 1/3 cup cooked, diced chicken and 2 Tbsp. of sauce.

  4. Roll and place in a pan, seam side down.

  5. Top with 2 cups shredded cheddar cheese.

  6. Bake until cheese is melted and enchiladas are warmed through; about 15 minutes.
