Ingredients
- 1 box (17.3 oz) Pie crusts or puff pastry sheets, thawed
- 1 egg, beaten
- 1 Tbsp. + 1.5 tsp. butter, cubed
- 1 cup milk of choice
- 1/8 tsp. cayenne pepper
- 4 oz. cheddar cheese
- to taste salt and pepper
- 8 oz. deli turkey
- 3 roma tomatoes, sliced
- 12 slices bacon, cooked and crumbled
- to taste chives, minced

Preparation Notes
Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar can be used in this recipe.
Directions
- Heat oven to 400°F. Line two 15 x 10-inch baking pans with aluminum foil.
- Unfold one sheet puff pastry on a lightly floured surface; roll out into a 12-inch square. Cut pastry into 16 squares, 3-inches each. Transfer pastries to prepared pan. Repeat step with remaining pastry.
- Brush pastries with egg wash. Bake for 12-15 minutes or until golden brown. Cool slightly on a wire rack.
- Meanwhile, melt butter in a saucepan over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and cayenne pepper. Bring to a boil; cook and whisk for 2 minutes or until thickened.
- Reduce heat to low. Gradually whisk in 1/3 cup cheddar until melted. Remove from the heat. Season with salt and pepper to taste.
- Cut turkey slices in half. Top pastry squares with turkey and tomatoes. Spoon about 1 1/2 teaspoons cheese sauce over each bite. Sprinkle with remaining cheddar. Broil 3-4 inches from the heat for 1-2 minutes or until cheese is melted. Sprinkle with bacon and chives.
