Ingredients
1 box (17.3 oz) Pie crusts or puff pastry sheets, thawed
1 egg, beaten
1 Tbsp. + 1.5 tsp. butter, cubed
1 cup milk of choice
1/8 tsp. cayenne pepper
4 oz. cheddar cheese
to taste salt and pepper
8 oz. deli turkey
3 roma tomatoes, sliced
12 slices bacon, cooked and crumbled
to taste chives, minced

Preparation Notes
Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar can be used in this recipe.
Directions
Heat oven to 400°F. Line two 15 x 10-inch baking pans with aluminum foil.
Unfold one sheet puff pastry on a lightly floured surface; roll out into a 12-inch square. Cut pastry into 16 squares, 3-inches each. Transfer pastries to prepared pan. Repeat step with remaining pastry.
Brush pastries with egg wash. Bake for 12-15 minutes or until golden brown. Cool slightly on a wire rack.
Meanwhile, melt butter in a saucepan over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and cayenne pepper. Bring to a boil; cook and whisk for 2 minutes or until thickened.
Reduce heat to low. Gradually whisk in 1/3 cup cheddar until melted. Remove from the heat. Season with salt and pepper to taste.
Cut turkey slices in half. Top pastry squares with turkey and tomatoes. Spoon about 1 1/2 teaspoons cheese sauce over each bite. Sprinkle with remaining cheddar. Broil 3-4 inches from the heat for 1-2 minutes or until cheese is melted. Sprinkle with bacon and chives.
