No Bake Pumpkin Energy Bites

  • 1 cup dates, chopped
  • 1/4 cup honey
  • 1/4 cup pumpkin puree
  • 1 Tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 cup old fashioned oats
  • 1 cup coconut flake, toasted
  • 1 cup sunflower or pumpkin seeds

Directions

  1. Combine  all ingredients.

  2. Cover and refrigerate for 30 minutes.

  3. Form into 1-inch balls and store in the refrigerator for up to two weeks.
