  • 1/2 cup brown sugar
  • 1 1/2 cup oat bran hot cereal
  • 1/2 cup unbleached white flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup applesauce
  • 4 Tbsp canola oil

Directions

  1. Preheat oven to 400°F.
  2. Line 12 muffin cups with paper liners or grease muffin cups.
  3. Blend together dry ingredients.
  4. Add 2 eggs (or substitute 4 egg whites), chilled applesauce, and vegetable oil. Mix until well-blended.
  5. Spoon batter into muffin cups.
  6. Let stand 10 minutes.
  7. Bake for 15 minutes or until golden brown.
