  • 2 cup oatmeal
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/3 cup sweetener (brown sugar, honey or maple syrup)
  • 2 Tbsp butter, melted
  • 1 egg
  • 2 cup milk
  • 2 tsp vanilla extract

Preparation Notes

For a Coconut Oatmeal Bake try adding chopped pecans, shredded coconut, and mixed berries. For a Berry Banana Oatmeal bake, add fresh berries and a sliced banana.

Directions

  1. Preheat oven to 375°F.

  2. Mix together oatmeal, cinnamon, salt, baking powder, and any additional dry ingredients.

  3. In a separate bowl, whisk sweetener, butter, egg, milk, and vanilla.

  4. Pour slowly over oatmeal and stir  to combine.

  5. Stir in additional ingredients and add to a 9x11 baking dish.

  6. Bake for 30-40 minutes, or until the stop is golden and oatmeal is set.

  7. Serve warm, or cool and store in the refrigerator.
