For a Coconut Oatmeal Bake try adding chopped pecans, shredded coconut, and mixed berries. For a Berry Banana Oatmeal bake, add fresh berries and a sliced banana.
Preheat oven to 375°F.
Mix together oatmeal, cinnamon, salt, baking powder, and any additional dry ingredients.
In a separate bowl, whisk sweetener, butter, egg, milk, and vanilla.
Pour slowly over oatmeal and stir to combine.
Stir in additional ingredients and add to a 9x11 baking dish.
Bake for 30-40 minutes, or until the stop is golden and oatmeal is set.
Serve warm, or cool and store in the refrigerator.
