  • 5 peaches, pitted and diced
  • 1 lemon, zest and juice
  • 3 Tbsp flour
  • 1/4 cup brown sugar
  • 2 Tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 0.1 tsp salt
  • 3/4 cup rolled oats
  • 3/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 3/4 tsp cinnamon
  • 0.1 tsp salt
  • 6 Tbsp butter, cut into pieces

Directions

  1. Preheat oven to 425°F.

  2. Combine filling ingredients and lay peaches evenly in an 8x8 baking dish.

  3. Combine topping ingredients using a fork and spread over peaches.

  4. Bake for 20-25 minutes, or until filling is warm and bubbly and topping is golden brown.
