Ingredients
- 1 Tbsp olive or canola oil
- 1/2 Medium onion, chopped
- 1 stalk celery, chopped
- 1 Mediuim carrots, diced
- 1/2 cup quinoa
- 1 cup hot water
- 1 bay leaf
- 1 Tbsp lemon zest
- 1 Tbsp lemon juice
- 1/2 cup frozen green peas, thawed
- 1 dash Salt
- 1 dash pepper
Quinoa is a great alternative to rice is you're looking for a nuttier flavor and some extra nutrients! Quinoa pilaf has all the flavor of rice pilaf with some extra fiber and protein to boot.

Directions

Pour oil in medium saucepan and place over medium heat.

Add onion, celery, and carrots. Cook and stir for 10 minutes, or until vegetables are tender.

Using a strainer, rinse quinoa under cold water and drain well.

Stir quinoa into vegetables and cook for 1 minute.

Add water, bay leaf, lemon zest, and lemon juice. Bring to a boil.

Cover and reduce heat to medium low. Simmer for 15 to 20 minutes, or until liquid is absorbed.

Discard bay leaf and stir in peas.

Season with salt and pepper.
