  • 1 pound spicy Italian sausage
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 carrots, chopped
  • 2 clove garlic, chopped
  • 6 cup chicken broth
  • 1 bay leaf
  • 1 tsp thyme
  • 1 tsp sage
  • 1 pinch salt
  • 1 pinch pepper
  • 1 can diced tomatoes
  • 1/2 cup uncooked orzo pasta
  • 1 can white beans, drained and rinsed
  • 1/3 cup Parmesan cheese
  • 1 bunch kale

Directions

  1. Brown sausage and remove from pan.

  2. Add a small amount of oil and saute onion, carrot, celery, and garlic for about 5 minutes, or until vegetables begin to soften.

  3. Add sausage back to the pan.

  4. Add chicken broth, bay leaf, thyme, sage, salt, pepper, and tomatoes.

  5. Bring to a boil and add pasta and beans.

  6. Simmer for 20 minutes, or until pasta is tender.

  7. Add cheese and kale.

  8. Simmer for 5 minutes. Serve.
