This sausage and kale soup is quick and easily customizable. Freeze and enjoy later or take for an easy lunch! 

Sausage and Kale Soup


  1. Brown sausage and remove from pan.

  2. Add a small amount of oil and saute onion, carrot, celery, and garlic for about 5 minutes, or until vegetables begin to soften.

  3. Add sausage back to the pan.

  4. Add chicken broth, bay leaf, thyme, sage, salt, pepper, and tomatoes.

  5. Bring to a boil and add pasta and beans.

  6. Simmer for 20 minutes, or until pasta is tender.

  7. Add cheese and kale.

  8. Simmer for 5 minutes. Serve.
