Ask your Fareway Meat Expert to remove back and tail from chicken, if desired.
Combine butter, olive oil, salt, pepper, lemon zest, 1 clove minced garlic, and 1 tsp chopped parsley and gently pull skin away from chicken breast and thighs.
Place rub under skin.
Combine Shock Top® Lemon Shandy, the juice of a lemon, garlic, and parsley and place chicken, breast side down, in marinade for at least 4 hours, up to overnight.
Grill chicken over a medium-hot grill, breast side down, for 5 to 10 minutes, or until slightly charred.
Flip chicken over (breast side up) and grill over medium-low heat for 35-45 minutes, or until the internal temperature in the thickest part of the chicken reaches 165°F.
