Southwest Ground Beef Salad

Taco Tuesday turns salad with your favorite Southwest flavors in one bowl.  Ground beef with taco seasoning puts this salad on the table in 30 minutes or less, but you can incorporate steak, chicken, pork or seafood. Top it with a spicy or chipotle-style dressing (or even salsa and sour cream) and it’s a fiesta in a bowl!

Ingredients

  • 2 cups shredded iceberg lettuce
  • 1/4 pound ground beef + taco seasoning, cooked
  • 2 Tbsp. shredded cheese
  • 1/4 cup sliced green onions
  • 2 Tbsp. chopped cilantro
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup corn
  • 2 Tbsp. tortilla strips
  • 1/4 avocado, diced
