Strawberry Cheesecake Bites

These strawberry cheesecake bites are the perfect treat to serve a shower, special event, or even for yourself! They're easy to make and just the right size to satisfy that sweet tooth.

Ingredients

  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 tsp. vanilla extract
  • 1 tsp. lemon juice
  • 3 Tbsp. granulated sugar, divided
  • 3 graham cracker sheets
  • 2 Tbsp. butter, melted
  • 1/2 cup sliced strawberries
  • 28 popsicle sticks, optional

Directions

  1. Combine cream cheese, Greek yogurt, vanilla, lemon juice and two tablespoons sugar. Mix with an electric mixer until smooth.

  2. In a separate bowl, crush graham crackers into crumbs and combine with melted butter and remaining one tablespoon of sugar.

  3. Spray 2 (14 count) ice cube trays with nonstick spray. Press graham crackers into each cube. Top with cream cheese mixture and strawberries. Insert popsicle sticks, if desired.

  4. Freeze overnight.

  5. Store in the freezer.
