This tropical chicken recipe is perfect for a holiday cookout or summer picnic!
Cut pineapple in half lengthwise and scoop out the inside with a spoon. Cube 1 cup of the fruit and reserve.
For the teriyaki chicken: Heat sesame oil in a medium-sized pan over high heat. Add onion and chicken and cook for 5 minutes. Pour in 2/3 cup teriyaki sauce and cook for 5 minutes or until the sauce has thickened and the meat is cooked through.
Combine ingredients as directed for DOLE SLAWESOME KIT- Mango Siracha flavor, in large bowl.
To serve: Place cooked rice in the bottom of the scooped out pineapple shells. Fill one half of each with slaw and chicken teriyaki. Garnish with chopped green onion.
