Total Time: 20 minutes
- 1 red onion
- 1 green bell pepper
- 1 red bell pepper
- 1 stalk green onion
- 1 clove garlic
- 1 pint cherry tomatoes
- 1 can black beans
- 1 can black eyed peas
- 1 can corn
- 1/2-1 bottle Italian dressing
Use fresh corn if the season allows.
Drain and rinse black beans, black eyed peas, and corn.
Chop onion, bell peppers, green onion, jalapeno, garlic, and halve cherry tomatoes.
Combine all ingredients in large serving bowl with Italian dressing. Refrigerate at least one hour prior to serving to allow flavors to come together.
